Wine Focus - Luigi Cecchi
Cecchi's vines are located in the municipality of Orvieto in the oldest and most restricted area of appellation known as the Classica denomination, as specified in the manuals of production.
The gradient of the vines is hilly with an average altitude of 280-300 metres above sea level. The varieties include Grechetto, Trupeggio, Procanico and Trebbiano Toscano.
The vinification is carried out in the production area using the most advanced technologies, which enable the desired characteristics to be extracted. All technical processes, which include fermentation in temperature controlled stainless steel vats, soft pressing and the inoculation of selected yeasts are all carried out in our winery by their technical team. The vinification process, which takes place in the area of production, is followed by a number of operations which include that of defecation, tartaric precipitation and sterilised bottling.
