100% Pinot Grigio, the grapes are picked at various stages of ripeness during the harvest in order to express different characteristics and add complexity in the final blend. Crushed and pressed immediately upon arrival at the winery into temperature controlled stainless steel tanks, the juice is left to cold settle overnight before racking off the gross lees and innoculation with a controlled yeast strain which works well and encourages aromatic development at low fermentation temperatures. Fermentation is at a cool, controlled temperature until the wine is dry, then it is racked immediately off the gross yeast lees. A few months ageing on fine lees takes place in steel before fining. All parcels are kept seperate during this process and the final blend is made of various component parts which bring different characteristics to the finished wine.
