Moderate climatic conditions have allowed us to harvest the grapes when the flavour profiles are at their optimum level, yet still retaining good acidity. The grapes are harvested over a wide range of harvest criteria to increase complexity, maximise and diversify flavours. They are rapidly and gently pressed to produce an elegant, fruit driven wine with low phenolics. The juice is then cold settled to clarify it, before being cool fermented in stainless steel tanks to retain the fruit character.

Flavours and aromas of passionfruit and nectarine gently compliment the delicate aroma of gooseberries. A mineral character lends a distinctly Graves-like character to the wine. The addition of Semillon has added to the texture. The fresh acid is balanced by a tiny amount of retained sweetness.

Ready to Drink? Yes but no hurry as these wines do actually mature well.

Food and Wine Matches: This is a great wine to drink on its own or it would fit well with Asian style food or fresh shellfish. Asparagus would be sensational match. Serve lightly chilled.
