Per Item: (6x75cl)	£18.34

The grapes were sourced from established vines which were planted in 1986 in the classic, shallow Coonawarra Terra-Rossa soil over limestone rock. Harvest took place between the 1st and 25th April and yields were between 0.6 and 1.5 tonnes/acre.Fermentation took place in Vinomatics and 8 tonne stainless steel static fermenters for 7 days. Individual parcels spent between 8 and 32 days macerating on the skins before racking to 86% new and 14% 1yo French barriques. The wine aged for a total of 19 months in these barrels with 100% malo-lactic fermentation.

Ready to Drink? Yes and no. Decant to drink now or keep for a few more years.

Food and Wine Matches: Rare beef and hard cheeses such as a mature cheddar or pecorino.
