Having initally produced the fresh Valpolicella wines the technique is to pour over the lees or pomace of the Amarone. This induces a secondary fermantation giving the wine a bigger flavour, mouth feel and alcoholic content.

Notes of dried fruit with soft coating tannins and a long dry finish.

Food Matches: Risotto is a perfect match, baked Italian sausages, peppered tuna fish or even some rich salmon dishes.
