The different varieties originating from the various estates owned by the wine cellar are fermented separately in stainless steel tanks, which are all equipped with separate temperature control and auto-remontages systems. Alcoholic fermentation lasts 10 days on average. Maceration is subsequently carried out with the head of the grape for up to 22-23 days at a temperature of 17 C.
