Production follows the same process as for the other Rueda whites, with cold maceration in cryomacerators in order to heighten the particular features of Riscal white wines: the extraction of the primary aromas of the wine, the fruit and freshness of the variety. Fermentation is carried out in French barrels of Allier oak for 20 days, followed by lees contact of 3 months.

Unctuous, refreshing and persistent in the mouth, with a background of fine lees, grilled nuts and toast.

Ready to Drink? Yes and no. Served slightly chilled, decanted perhaps is tasting great. However these venerable white Rioja wines can mature for as long as their red counterparts.

Food and Wine Matches: This wine makes a good pairing with fish prepared in a sauce, white meat, even with sauces if they are not too strong, roast lamb, sauted vegetables and pulse dishes, etc.
