Per Item:

5% Cabernet Sauvignon, 70% Corvina Veronese & 25% Rondinella.

The grapes are dried naturaly in airy lofts, for at least 4 months, with a loss in weight of around 40%. Destemming and crushing of grapes preceeds the fermentation which is controlled between 18-22C. Maceration lasts for 20 days and the wine is matured in wood, for at least 18 months, before fining in bottle.

A perfect blend of strength and elegance. The deep ruby red colour hints at its perfume, which is an exceptional concentration of wild fruits and hints of cacoa. At the first sip, this wine unfolds its full flavour in the mouth, strong, rich and vigorous, yet surprising in its balance, maturity and refinement.

Ready to Drink? Approachable now with decanting but will mature further.

Food and Wine Matches: This wine is traditionally drunk with game, grilled meats, stews and well matured cheeses. Serve at 18-20C and open the bottle an hour before drinking.
