Per Item:

Deep, almost opaque black cherry in the glass. On the nose it has youthful fruitiness, morellos, mulberries and Morocco leather. In the mouth there is a depth and a richness which carry on into a very long finish.

After harvesting the best quality, unbruised grapes, the bunches are laid out one deep in plastic crates with holes in the bottom, in a well ventilated room. By the new year, around 30% of the weight of the grapes has been lost in evaporation and the remaining must is correspondingly more concentrated. At the same time an extra dimension of complexity is gained, giving this Amarone its intense lifted fruit characteristics. It is then fermented slowly in the cold of winter (at around 19C) and aged in wood barriques for two years.

Ready to Drink? Yes and no. Decanted the wine does open up beautifully however can also be matured for a further 3-5 years.

Food and Wine Matches: The sumptuous richness of this wine makes it an ideal accompaniment to meat dishes with a hint of sweetness: venison with redcurrant sauce, devilled kidneys on toast, or even onion soup made with marrow stock. Fantastic with Roquefort.
